One of the books I'm currently reading has short quotes at each chapter heading: When an elephant falls, do not place yourself under him to hold him up... - Jean Herbert. I need to quit placing myself under that elephant called work.
The expiration date on the eggs was today so I used them up in a double batch of chocolate chip cookies with a few extra additions: 2 teaspoons cinnamon and 1 cup each of walnuts and coconut.
2 cups softened butter
1.5 cups brown sugar
.5 cups white sugar
2 boxes (3.4 oz) pudding mix
2 teaspoons vanilla
4.5 cups flour
2 teaspoons baking soda
2 packages (12 oz) chocolate chips
Combine flour and soda in bowl and set aside.
Cream butter, sugars, pudding mix, and vanilla.
Add eggs and mix well.
Gradually stir in flour and soda.
Stir in chocolate chips.
Bake at 375F for 9 minutes. Cool on pan for 2 minutes and remove to wire rack.
If you use chocolate or butterscotch pudding, add a little extra flour so they don't spread.
Makes 6 dozen cookies for your Cookie Monsters! :)
